For those wishing a dietarily responsible alternative, prepare cauliflower as you would potatoes and serve instead of potatoes. This saves the work of peeling potatoes, has only a slight cauliflower taste, depending on your garnish and far less starch, so is more or less acceptable.

For those wishing to hide the taste of the cauliflower somewhat, add some cream cheese,
experimenting with the amount until it satisfies your tastebuds.

I can envision rows and rows of cauliflower replacing rows and rows of potatoes. I know you’re ALL eating responsibly.
